Hard to say, as the two have never faced each other in the comics. That said, Trigon across mainstream universes has conquered more worlds than Darkseid has, so perhaps he has more cosmic “street cred,” ha.

They did fight each other in justice league dark: apokolips war and both darkseid and trigon in that universe are pretty comparable to their prime earth counterparts. So if we are to take that fight into account then darkseid will be the winner but just barely.

I feel like everyone in the universe would loose that battle, including Darkseid and Trigon.

I don't think the Apokolips War fight was a good indicator of their strengths.

I'd say they both know enough about the other that they will steer clear.

Well that’s certainly an unenthusiastic approach to the topic.

They're characters, not mindless action figures. They didn't get to where they are by just punching things. Their power is in manipulation, mostly. They know they can't manipulate each other and they know fighting will result in a very pyrrhic victory at most, but most likely mutual destruction.

If we are to take the current Darkseid, the one featured in infinite frontier and justice league incarnate, who has absorbed all the broken fragments of himself from throughout the multiverse and is considerably stronger then his previous self then it is a straightforward win for darkseid.
