A little late, but I think I have some recommendations. I'm not a Superman expert by any means, but I think I've read enough to help point you in the right direction. (And maybe deprogram some misconceptions recent movies have created surrounding the character)
All-Star Superman proves that Superman can be a strong, almost mythic hero and still retain a connection to humanity.
Superman: Up in the Sky represents Superman's determination in the face of adversity incredibly well.
What's So Funny About Truth, Justice, and the American Way is the ultimate rebuttal to the idea of mega-powered super-teams with no care for collateral damage in the name of mindless spectacle, and shows why Superman is still relevant in the 21st century.
The Warworld Saga shows that you can write an epic story with Superman without sacrificing his compassion for others and his determination to save a life.
Rebirth-era Superman and Action Comics is a great representaton of a late-stage Superman, and is a good introduction to Jon Kent, who is an interesting character in his own right.
For the Man Who Has Everything is not only a great Superman story, but also showcases his connection to other members of the superhero community. Specifically Batman, Robin, and Wonder Woman, but the concept applies for the superhero community at large.
I would also recommend the "Triangle Era" of Superman comics, which begins in 1991, and provides a good deep dive into the character's wider lore and supporting cast. (Though things do take a weird turn here and there as they often did in the 90s)
