Part of why Fabletown worked so well in the past is that I was willing to do all the dark things Snow and King Cole shouldn't have to know about, and wouldn't want to know about. 
Fabletown is the unofficial name for a neighborhood in Manhattan, New York City, where many human-form Fables live. Non-human form Fables live on the The Farm in upstate New York.
History
Fabletown was established sometime in the early 17th century, constructed with the help of witches and wizards to create Business Office, which was larger than the building itself. It has an enchantment around it that keeps Mundies from noticing anything odd, though the spell will be broken if something unusual draws too much Mundy attention, like a troll walking down the street. Hence the need for glamours, and the sheriff having one of his jobs being to help Fables protect the secret.
